Tofu Parmesan
Ingredients:
12 oz extra firm tofu
2 eggs
1 cup corn flake crumbs
4 slices mozzarella cheese
2 cups marinara sauce
1/2 cup grated parmesan
Directions:
Remove tofu from container and drain water. Wrap tofu in paper towel and leave on counter to drain for 20 minutes. Pat tofu dry with a paper towel. Slice tofu in half, across the middle to make two thinner pieces. Then cut tofu into 4 rectangles. Coat the tofu patties in egg then dip into crumbs. Place on a lightly greased baking pan and bake in oven on 400′ for 15 minutes or until slightly crispy. Remove tofu from pan. Coat pan with layer of sauce. Place tofu on top of sauce. Place additional sauce on top of tofu. Layer cheese slice on top of sauce then parmesan on top of cheese. Cook for an additional 5 to 10 minutes or until cheese has melted.
