Spinach Quinoa Patties

Ingredients:
8 oz. Frozen Spinach (defrosted)
1 small onion, diced
2 eggs
2 1/2 cups cooked quinoa
1 tsp. salt
1/2 tsp. garlic powder
1/8 tsp. cayenne pepper
1/8 tsp. black pepper
Directions:
Saute onions and spinach until tender. Combine spinach onions and cooked quinoa in a large mixing bowl. Season with salt, pepper, garlic and cayenne pepper. Add eggs and mix well. Heat up a frying pan with 2 tablespoons oil and cook patties. Use a tablespoon measuring spoon for small patties or an ice cream scooper for larger sized patties. You can also bake them on 350′ for 15 to 18 minutes. Be sure to grease the baking pan so they don’t stick to it. Optional: Add in grated parmesan cheese or shredded cheddar or mozzarella to turn this into a dairy delight!

I can’t get frozen spinach with a hechsher. Can I use fresh?
Yes just make sure to chop up spinach
