Lotus Cookie Butter Cupcakes
** Please note not all Biscoff Lotus products are Kosher. When shopping, look for the Kosher certified label on each product.
Cupcake Ingredients:
2 cups of flour
1 and 1/3 cup of sugar
3 teaspoon baking powder
1 teaspoon salt
1/2 cup of oil
1 cup of orange juice
2 eggs
1 teaspoon vanilla extract
Lotus cookie butter spread for filling
Lotus cookies, crushed into crumbs for topping
Lotus cookies, for topping
Directions:
Combine cupcake ingredients in a large mixing bowl. Using an ice cream scooper, fill cupcake liners. Add a teaspoon of cookie butter (or more if you want extra filling!) to center of cupcake. Bake on 350′for about 25 minutes. Allow to cool off before frosting with cookie buttercream then adding cookie crumbs. Optional, you can top each cupcake with a lotus cookie.
Ingredients for Cookie Buttercream Frosting:
3 cups confectioners powdered sugar
2 tablespoons soy milk, almond milk or water
1 tsp. vanilla extract
1 stick of butter (or margarine) softened to room temperature
3 tablespoons cookie butter
Directions for Frosting:
Cream together and blend until smooth.
