Cast Iron Skillet Latke Lasagna

I teamed up with Ralphs to create a brand new delicious way to eat Latkes. This is the ultimate comfort food dish for the holidays. Thick stacks of crispy potato latkes layered over ricotta mozzarella and tomato sauce, cooked to perfection in a cast iron skillet. Ingredients:
1 bag (30oz) of Kroger Country Style Hash Browns (defrosted)
2 eggs
2 tablespoons flour
Salt to taste
Black Pepper to taste
Kroger ricotta cheese
Kroger tomato sauce
Simple Truth Italian seasoning
Sliced mozzarella
Directions:
1. Place defrosted hash browns in a large mixing bowl.
2. Add eggs and flour and season with salt and pepper. Combine well.
3. Heat up a large frying pan with oil and fry latke batter until both sides are nice and crispy.
4. Layer fried potato latkes in a cast iron skillet with ricotta cheese, tomato sauce, Italian seasoning, mozzarella then an additional potato latke on top with a final layer of mozzarella cheese. Cook until cheese has melted. Optional, top with tomato sauce and freshly chopped parsley.
