Fried Brown Rice with Edamame

Ingredients:
4 cups cooked brown rice (you can also use white rice or quinoa)
4 eggs
2 T oil
1 3/4 cups edemame
2 T soy sauce
1/2 t salt
1/4 ground ginger
1/4 t garlic powder
1/4 black pepper
Directions:
Whisk together eggs in a bowl. Heat up a large pan with 1 T oil. Scramble eggs in pan. Place cooked rice in a large mixing bowl. Combine with scrambled eggs, edemame, spices and soy sauce. Mix together. Heat up pan again with 1 T oil. Add rice mixture to pan. Cook for about 6 to 8 minutes, stirring so the rice does not stick to the pan.
Tips & Tricks: Add cooked chicken, ground beef, sausage or tofu to the fried rice.

I was planning to make stir fry tonight and saw this posted. Thanks for the inspiration to change it up from just vegies to fried rice with vegies.
