Crunchy BBQ Chicken {BAKED not Fried!}
When I want something crunchy and fast, this is the dinner I will make. Everyone loves it and it’s great as leftovers the next day for chicken salad or served in a sandwich.
Ingredients:
1 lb. Boneless Chicken Breasts
1/2 cup of Mayo
1/2 Cup of BBQ sauce
1 cup corn flake crumbs
Directions:
Combine the Mayo and the BBQ sauce in a medium to large sized bowl. Dip the chicken into the mixture, then coat it with the corn flake crumbs. Arrange the chicken onto greased baking sheet and bake uncovered on 400 for about 20-25 minutes or until cooked.

Mmm… my husband’s secret is to crush a little garlic into the mayo and let the chicken sit in it for a while. Killer. (In Canada, we could even buy roasted-garlic mayo, but I haven’t seen it here in Israel. Though now that I think about it, I suppose the ubiquitous Hellmann’s “garlic sauce” is more or less the same thing.)
Hi! I’d love to try this but I have a question. Whenever I try to bake chicken that includes mayo, I find the mayo seems to melt and pool under the chicken making it soggy not crispy. Should I use a grill pan in the oven so it doesn’t sit in it or do you have any other ideas? Thanks!
Hi Devorah! You can place a wire rack inside the baking sheet or flip the chicken over in middle of cooking so both sides are crispy. Good luck! This is a family favorite and I make it at least once a week. I like to have leftover for chicken salad and wraps for lunch.
Hi, I have to ask – what brand of cornflake crumbs do you use? I made this using the Gefen brand and they were crushed to a fine puree – not really crumbs.
Kellogs corn flake crumbs.
