Apple Pie Stuffed Crumb Challah
Ingredients:
Challah dough (I use this recipe HERE)
Apple Pie Filling (recipe below)
Egg Wash (2 eggs mixed with 1/4 cup water)
Crumb mixture (recipe below)
Directions:
Separate challah dough into balls then flatten each ball and place apple pie mixture in center. Pinch the ends together to close each ball. Place one ball of dough in the center of a parchment lined circle pan. (a pie pan works great for this!) Surround it with additional balls of dough until pan is full. Brush dough with egg wash and top with crumb mixture. Bake on 350′ for 20 minutes on top rack of oven then switch challah to bottom oven racks and bake an additional 20 minutes or until challah is golden browned on top.
Apple Pie Filling:
2 large apples (gala or granny smith)
1/4 cup brown sugar
2 teaspoons cinnamon
1/4 teaspoon allspice (or nutmeg)
2 tablespoons flour
Juice of 1 lemon
Dice and peel apples and combine with remaining ingredients.
Crumb Mixture:
1 cup of flour
1 cup of light brown sugar
1/2 cup of margarine
1/4 teaspoon cinnamon
Combine ingredients using hands until you get a crumb texture.
