Cheesy Mushroom Pasta
Ingredients:
1 tbsp olive oil
4 cloves garlic chopped
8 oz button mushrooms sliced
1/2 cup vegetable broth
1 lb penne pasta
2 tbsp mustard
2 cup whipping cream
1 package 8 oz cream cheese
1/2 cup walnuts
chopped
1 tbsp chives chopped
Directions:
- Heat oil in large skillet with mushrooms and garlic saute for 4 minutes until tender
- Add the vegetable broth and boil until mixture reduces by half (5 minutes)
- Cook pasta according to package and drain
- Add mustard and cream to mushroom mixture
- Cook and stir over high heat until sauce thickens (2 minutes)
- Reduce heat to low
- Add the pasta & walnuts to cream cheese mixture
- Stir gently to combine
- Garnish with chives and serve hot
