Brownie Stuffed Egg Rolls
Ingredients:
1 box Brownie Mix (Duncan Hines)
2 eggs
1/4 cup water
1/2 cup oil
1 package egg roll wrappers
Powdered sugar for dusting
1 bag of chocolate chips, melted
Directions:
Combine dry brownie mix with eggs, water and oil. Fill up egg roll wrappers using a tablespoon measuring spoon to scoop out 1 tablespoon brownie batter and placing in center of egg rolls. Fold the top over then the bottom then roll over from left to right forming egg rolls. Place on a greased baking sheet. Spray with cooking oil. Bake on 350′ for about 12 to 15 minutes or until wrappers are crispy and slightly browned. Dust with powdered sugar and drizzle melted chocolate on top. (melt chocolate chips by placing in a bowl in the microwave on 30 seconds then stir and set it again for an additional 30 seconds)

Would this be good for shabbat lunch?
I like them fresh or heated up in the microwave but my husband ate one the next day without heating up and liked it!

I made them this week and the bottoms came out a little tough to eat. Do you have any suggestions on how to make them softer? I was thinking of turning them over in the middle… Also, I added water to the chocolate chips to make it easier to drizzle. Normally I would probably add rich’s whip or soy milk for a better taste on top, and if I have it on hand.
