Crispy Salmon Nuggets {Baked not Fried}
What kid doesn’t like fish sticks? These crispy little salmon nuggets are an easy dinner to prepare and can be served with different dipping sauces. Try garlic mayo, mayo and ketchup, honey mustard and good ol ketchup.
Ingredients:
1 lb. salmon fillet
3 eggs, whisked together
1 cup of panko crumbs
1/2 tsp. fine sea salt
1/4 tsp. black pepper
cooking spray
Directions:
Combine spices and panko crumbs. Cut salmon into bite sized pieces (about 1 inch thick) then dip into eggs and then coat with panko crumbs. Place on greased baking sheet and lightly spray with cooking spray. Bake in oven on 400’ uncovered for 15-20 minutes.
Tips & Tricks: Chop up fresh herbs and combine with the panko crumbs for a tasty gourmet flavor! Pack leftover salmon nuggets in your kids lunch box with their favorite dipping sauce and send with them to school for a healthy lunch.
