Easy NO FUSS LAZY Meatballs
These are the best meatballs. They also happen to be ridiculously easy to prepare! If you want a gluten free substitution, swap the bread crumbs for almond powder, coconut powder or my personal favorite instant oats! I’m not gluten free but I use instant oats in place of bread crumbs for a super soft fluffy meatball.
Ingredients:
1 lb ground beef
2 eggs
1/2 cup bread crumbs
1 jar marinara sauce (trader joe’s basil marinara is my favorite!)
1 cup coconut milk (water,soy or almond)
Directions:
1. Bring marinara sauce and coconut milk to a boil then simmer. (you can also use water, almond or soy milk)
2. Combine ground beef, eggs and bread crumbs. Don’t over mix! That creates a tough meatball.
3. Form beef mixture into balls using a tablespoon measuring spoon.
4. Now you have two options, either place them on a lightly greased baking sheet and bake in the oven on 400′ for about 20 minutes then add them to the sauce and let it cook in sauce for an additional 15 to 20 minutes or place them directly in the sauce and let them cook in the sauce for about an hour.
Optional: Serve with freshly chopped parsley or dry oregano, thyme or rosemary.

Oh, wow… coconut milk in a tomato sauce?!? Too bad we just had (unsatisfying) meatballs last week, or I would definitely have to try these. Maybe next week, if it’s not too soon.
It came about from a lazy night of cooking! I did not want to go to the store and had a jar of marinara which didn’t fit all of the meatballs and I wanted to add more sauce so I opened my fridge and found the coconut milk! I personally love coconut milk and really liked the addition to the sauce. As I mentioned, you can also use water, almond milk or soy milk. If you like it sweet and slightly tangy you can swap the milk for a can of cranberry sauce.
My grandson is allergic to gluten and eggs. How could this recipe be adapted (for Pesach and the rest of the year)? What could be used instead of bread crumbs and eggs?

Skip the eggs and use potato starch. You can also skip the potato starch and just use the ground beef.
Can you use flaxseeds as an egg replacement?
I often use falxseed in place of eggs when baking, I have not tried it with this particular recipe. If you do let me know how it comes out!

How can it be kosher with milk and meat together.
Hi Helena, the milk used in this recipe is not dairy so it can be mixed with meat.
