Passover Apple Kugel
Ingredients:
6 large apples
5 eggs
3 tablespoons potato starch
1/2 cup of sugar
1/4 cup of oil
1/2 lemon rind
1/2 teaspoon of salt
1 teaspoon of vanilla extract
Directions:
Peel and slice the apples then mix together with the remaining ingredients. Bake in a 9×13 pan on 350′ for about 45 minutes or until done.

How thin do I slice the apples? What type of apples should I use. Do I grease the baking pan? Can I make this the day before and reheat? This one sounds yummy. I will absolutely make it for Pesach. Do you have any other easy recipes for Pesach Kugels. I usually have 22-24 people for Seder, so I want to make at least two different kugels.
how do you make the lemon rind? i havent seen kosher l’pesach lemon rind before…
Re: the lemon rinds – the outsides of fresh lemons are often sprayed w/color & therefore can’t be used on Pesach (same w/oranges).
Go organic. Even if they arent listed kosher for passover which they should be, they still go by many similar rules.
