Chocolate stuffed Cupcakes topped with Chocolate Frosting and KOSHER Candied Beef Bacon Bits
Happy National Bacon Lovers Day! But make it KOSHER with these Chocolate Stuffed Chocolate Cupcakes topped with Chocolate Frosting and Jacks Gourmet Kosher Candied Beef Bacon Bits with some extra Chocolate Drizzled on Top.
Chocolate Cupcakes:
1/2 cup cocoa powder
1 cup water
1 1/2 cup flour
3/4 teaspoon salt
1 tsp baking soda
1/4 teaspoon baking powder
1/2 cup oil
1 1/4 cups sugar
2 eggs
1 1/2 teaspoons vanilla extract
Directions:
Combine cupcake ingredients in a large mixing bowl. Fill up cupcake liners 3/4 way full and bake on 350′ for about 22 minutes or until baked. Allow to cool off before frosting with chocolate frosting and topping with chopped up candied beef bacon. Optional, melt dark chocolate chips and drizzle on top.
CHOCOLATE FROSTING
1/2 cup (1 stick) margarine
3 cups powdered sugar
1/3 cup water
2/3 cup cocoa powder
Directions:
Melt butter. Add powdered sugar and water, mix until combined. Stir in cocoa powder. Mix well.
Candied Beef Bacon:
Ingredients:
4 oz. Jack’s Gourmet Facon
1/2 cup brown sugar
Directions:
Rub brown sugar over kosher beef bacon strips then place on parchment lined baking sheet and bake on 350′ for about 10 minutes or until edges are crispy. Allow to cool off before cutting into small pieces. Top cupcakes with chopped up candied beef bacon bits.
